Lemon Verbena & Almond Short Biscuits
Deliciously chewy but still with a crunch and a subtle lemon flavour

Ingredients
200g Plain Flour
50g Ground Almonds
125g Caster Sugar
175g Butter
Good handful of chopped Lemon Verbena or any other fragrant herb
Chop Lemon Verbena finely
Put flour, ground almonds, sugar, butter and lemon verbena in mixing bowl and mix together until a smooth dough is formed
Shape into a log and wrap in glad-wrap/baking paper and put into fridge to chill for approximately 1 hour or until firm
Cut into slices and place on a baking sheet and gently press down a little to slightly flatten but not really thin
Bake in oven 160*C/275F for 20-30 minutes until pale golden.
Leave on tray for 5 minutes before moving to a wire rack to cool These are delicious and wont last long! Enjoy with a cup of coffee!
