What to do with your windfall apples or even just your apples on the tree
This is a wonderful cake, and I have been making for many years as it is a fantastic way to use up those windfall apples or just your apples off the tree. It is lovely and moist and can be eaten one its own or warmed up, serve with yogurt, ice cream or custard, so yummy !
You will need a 20cm (8 inch) deep cake tin, round, square what ever you have or even a bread tin or little round tins if you want to divide the mixture and freeze off individual cakes once baked.
Line it with baking paper or just grease it really well.

Ingredients
250g (9oz/2 1/2 cups) self raising flour
Pinch of salt
175g (6 oz/3/4 cup) butter or margarine/spread
100g (4 oz/1/2 cup) caster/superfine sugar
100g (4 oz/1/2 cup) sultanas (golden raisins) - optional but does help with moisture
350g (12 oz/3 cups) of windfall apples, peeled and diced
2 eggs
Caster sugar to dredge the top of the cake
Add the flour, salt and butter into a bowl and rub in the butter - this can be done by hand or using an electric mixer.
Once the butter is rubbed in add the sugar, sultanas (if using) and the diced apples and mix in.
Add the 2 eggs and miix in gently - don’t beat.
Pour the mixture into your cake tin.
Bake in the oven at 180*C/350*F/gas mark 4 for approximately 50 minutes or until when a skewer is inserted in the centre and come out clean.
Let it sit in the tin for about 5 minutes before taking out and put on a cooling rack.
